Our Japanese Knotweed Raw Honey is harvested straight from our hives in the Catskill Mountains of Franklin, New York — raw, unfiltered, and never heated. This one comes from a single, fleeting late-summer bloom: the knotweed growing wild across our farm, foraged by our bees for only a few short weeks each year. The result is a bolder, darker honey than our Wildflower — rich, slightly tart, with a deep molasses-like finish. We harvested just 50 lbs this year, and there's no telling if the bees will find enough knotweed in bloom to make more next season. No additives. No processing. Just a rare batch of pure honey, from the same four generations of beekeeping behind everything we make.
